SPICY. SMOKY. PROBIOTIC. Mustard seeds have been used by every ancient culture for their flavor and medicinal purposes. This spicy blend is also fermented with chardonnay, fresh turmeric and mesquite smoked onion.
Dark Horse was started by a chef in California inspired by the Japanese flavours his grandparents served him as a child. Everything Greg ate as a kid was spiked with soy sauce and at times, ketchup. This Japanese style of cooking that includes western condiments is called Yoshuku. As an adult he created his own cuisine through the Yoshoku lens of childhood while combining modern & ancient traditions. Dehydrating, pickling, and fermenting in order to create round and umami flavors that paint cuisine was void of. His aim is to provide organic pantry staples without added sugars or preservatives, while focusing on sustainability - using only glass jars which they encourage their customers to repurpose.
