The veggies in this spicy local kimchi rotate based on what is available seasonally in Ontario. With so many choices for serving this topping or side dish, try getting creative and use kimchi as a base for soups or veggie stir-fries. Alternatively, make a probiotic homemade Korean salsa and serve as a dip for chips or veggies. Not only is there the benefit of assisting digestion and contributing to a healthy internal flora; it also supports local farmers and contains higher nutrients because the produce is processed right from the fields.
