Lemon Raspberry scones
When life gives you lemons... Make raspberry lemon scones! Scones are a beloved treat, perfect for breakfast, brunch, or a delightful afternoon snack. Not only does this recipe put a delightful twist on the classic scone by making it gluten and dairy-free, but it adds the refreshing flavors of lemon zest and juicy raspberries. These scones are light, flaky, and bursting with fruity goodness, making them a delightful addition to any table.

In fact their scone and biscuit package only contains five ingredients: Almond flour, tapioca flour, baking soda. Cream of tartar, and sea salt. That’s it! What you’ll need:
- 1 egg (or egg replacer)
- 1 tablespoon apple cider vinegar
- 3 tablespoons oil (we love avocado oil!) or melted butter
- 2 tablespoons water
- Optional: 2-3 tablespoons coconut sugar (for sweeter scones).

Scones
- Heat oven to 350 degrees
- Whisk egg (or egg replacer), apple cider vinegar, oil, and water together. For sweeter scones, stir in coconut sugar.
- Add one 1 package of Stellar Eats Biscuit + scone mix.
- Mix until combined and uniform. Do not overmix.
- Oil hands and gently shape pieces of dough into 6-10 rounds. Do not flatten too much as dough will not spread or rise when baking.
- Bake in a preheated oven for 20-25 minutes.
- Cool for 10 minutes before slicing or topping with icing
Icing
- ½ cup of icing sugar
- Add in two tbs of water
- Optional red dye for coloring

Instead of adding icing sugar to top your scones, pair whisk up your favorite dairy free strawberry yogurt (we love using Simpla or Yoggu) with an electric mixer until you have a thick whipped cream. You can also add a coconut cream to give you that extra creaminess! Healthy, without the compromise of a delicious flavor.

Tips for perfect scones
While scones are simple to make, there are a few tips and tricks to ensure that they turn out perfectly every time:
- Use cold ingredients! This is essential for achieving a light and flaky texture in your scones. It's also a good idea to chill your mixing bowl and utensils before starting.
- Do not overmix the dough, as this can result in tough scones.
- When shaping the dough, be gentle to avoid compacting it. Pat the dough into a circle and use a sharp knife or pastry cutter to cut it into wedges.
- Fresh raspberries work best in this recipe, but you can use frozen raspberries if fresh ones are not available. Just be sure to thaw and drain them before folding them into the dough.
- These lemon raspberry scones are best enjoyed fresh from the oven, but they can also be stored in an airtight container at room temperature for up to 2 days. To reheat, simply place them in a 350°F (175°C) oven for 5-10 minutes, or until warmed through.
