Ingredients:â
1/3 Cup Apple Sauceâ
1/4 Cup Maple Syrupâ
1/4 Cup Melted Coconut Oilâ
1 tsp Vanilla Extractâ
1/2 Cup Peanut Butterâ
1 Egg or Flax Eggâ
1 1/4 Cups Rolled Oatsâ
3/4 Cup Oat Flourâ
1 tsp cinnamonâ
1/2 tsp Baking Sodaâ
1/4 tsp Sea Saltâ
1/2 cup Chocolate Gemsâ
1/2 cup lightly crushed Potato Chipsâ
1/2 cup chopped Pretzelsâ

Directions:â
Preheat oven to 350â and line a baking sheet with parchment paper.â
In a large bowl, whisk together to apple sauce, maple syrup, coconut oil, vanilla extract, peanut butter and flax egg. Add in the rolled oats, oat flour, cinnamon, baking soda and sea salt and stir to combine.â
Fold in the chocolate gems, crushed potato chips and chopped pretzels. Use a cookie scoop to scoop out 12 cookies onto the parchment paper lined baking sheet. Use clean hands to gently press down and shape each cookie.â
Bake for 10-12 minutes until lightly golden brown, then allow to cool completely before eating. â
