Everything but the Kitchen Sink Cookies

Ingredients:
1/3 Cup Apple Sauce
1/4 Cup Maple Syrup
1/4 Cup Melted Coconut Oil
1 tsp Vanilla Extract
1/2 Cup Peanut Butter
1 Egg or Flax Egg
1 1/4 Cups Rolled Oats
3/4 Cup Oat Flour
1 tsp cinnamon
1/2 tsp Baking Soda
1/4 tsp Sea Salt
1/2 cup Chocolate Gems
1/2 cup lightly crushed Potato Chips
1/2 cup chopped Pretzels
Directions:
Preheat oven to 350℉ and line a baking sheet with parchment paper.
In a large bowl, whisk together to apple sauce, maple syrup, coconut oil, vanilla extract, peanut butter and flax egg. Add in the rolled oats, oat flour, cinnamon, baking soda and sea salt and stir to combine.
Fold in the chocolate gems, crushed potato chips and chopped pretzels. Use a cookie scoop to scoop out 12 cookies onto the parchment paper lined baking sheet. Use clean hands to gently press down and shape each cookie.
Bake for 10-12 minutes until lightly golden brown, then allow to cool completely before eating.
